Gluten Free Rich Moist Brownies
Preheat oven to 350 degrees. Prepare an 8x8x2 ceramic baking dish with parchment or non-stick foil for easy removal. Hang it over the sides so you can just lift it out. For the parchment, butter the dish first so it sticks.
Melt chocolate and grass-fed butter in the microwave in a glass measuring cup for approximately 30 seconds, stir and continue until melted. Whisk together and set aside.
In a separate bowl, mix together dry ingredients such as almond flour, cocoa powder, pink salt and baking powder.
Meanwhile, beat together eggs, sugar and vanilla for approximately 2 minutes and light in color.
Slowly pour the melted chocolate and butter mixture into the wet ingredients while still beating the mixture until all incorporated.
Pour the all the wet into the dry ingredients while beating until completely mixed and incorporated.
Bake for 25-30 minutes. I usually pull mine at 25 (put a knife in the middle it should be pretty clean not wet but still moist). Cool and cut into squares.
